My Wife soaks it in Orange Juice & Seven Up to take out the salt, cooks it until the skin is crunchy and makes sure the meat is tender as well. This week at work has been crazy and I've had to work like an athlete every day. Time to start eating like one or I will burn out this weekend. 2nd picture is sweating down the mirepoix, cooking the chicken and sausage, and toasting the creole spice. Then you sweat the quinoa pic 3. Add green veggies and chicken stock and boil. Stir, cover, drop to low for about 13 mins. We had a delicious combo of eggs, bacon, fresh fruit, hash browns, and cinnamon rolls with orange icing. And of course some champagne to go along with it.
